Stir-fry Tofu – Tofu con vegetales

September 26, 2013 Leave a Comment

As you already know I do a lot of my grocery shopping at Trader’s Joes and for this stir-fry classic we’ll we will be using tofu. Now I love stir-fry, it lends itself to a lot of different dishes one of which is tofu. Many people haven’t tried using tofu to make stir-fry most use chicken or pork but tofu can be good replacement. Some people say tofu lacks flavor or that they don’t like the texture but it’s all in the way you prepare it. For me, raw tofu doesn’t have any flavor but with a little seasoning and some love you can make it taste great. This is how I used tofu for stir-fry.

In this dish you will need the following Ingredients;

First drain the water from the tofu. Let it drip dry a little bit then wrap it in paper towels and give it a bit of a squish. Once you’ve gotten as much water as you can out of the tofu, without destroying it, re-wrap the tofu in another paper towel and let it sit; if you can, do this step the night before if not, let it sit for a few hours before you start the dish. Cut the tofu in big pieces and lightly sprinkle the pieces with salt pepper and ginger powder.

Stir-fry

Take one egg out and lightly beat it in a bow; we want the yoke mixed with the white but not overly beaten. In another bowl mix together a bit of flour and panko breadcrumbs. Next dip the tofu in the egg and then into your panko and flour mix once the tofu is all dressed in the mix set the pieces in a foil covered cooking sheet; I add salt, pepper, ginger powder then spray the pieces with oil on both sides. Pre-heat the oven to 350 degrees Fahrenheit when the oven is preheated place the tofu on the middle rack for around 30 min.

stir-fry

Remember to flip the pieces after 15min so they are evenly cooked on both sides. When you are done with the tofu cut the pieces into smaller chunks.

Stir-fry

Heat your wok or deep pan with some oil. When your pan is hot add in green onions and sauté them for a few seconds, add the frozen vegetables (harvest hodgepodge) and sauté them until they are defrosted, add the stir-fry sauce, a little of soy sauce, pineapple, and lastly the tofu. Give it a bit to soak in all of the flavors in and then serve; this whole sauté process should not take more than 2 minutes. This can be served with a side of rice or quinoa.
