Sopa de tomate con albongigas y tortellini

March 9, 2013 Leave a Comment

I tried tomato soup for the first time when I moved to The States. I liked it, however I prefer to add some extra flavor to the soup. This time I added some tortellini, frozen spinach and some leftover turkey meatballs that I made the day before. This is the perfect soup for those rainy days when the only thing that you want to do it lay down on the sofa and watch a movie.

Tomato Soup with Tortellini and turkey meatballs.

Y listo

Simply make the tortellini as instructed by the package. It should be a little Al dente because it will continue cooking when you put it in the tomato soup. Just before the Tortellini is ready heat the soup then add the tortellini to it. Last, add some the frozen spinach. Optional: Add some meat to the soup. When this picture was taken I made the meal with turkey meatballs.
